Rustic Grilled Peaches and Honey

Brentley Stead

Fire up the grill for this tasty dessert.

Grilling is never out of season but peaches are best from June to September. These honey kissed peaches are a perfectly easy dessert to throw on the grill. Each half tastes like a peach cobbler and it's delicious enough to make even the pickiest eaters happy.

Ingredients:
4 Firm Peaches
3 Tablespoons of Honey (any varietal but we love Orange Blossom for this)
1 Teaspoons of Cinnamon
1 Shotglass of Cinnamon Liquor like Fireball* (optional)
Vanilla Ice Cream (optional)

You'll Need:
Grill - Gas Grill Recommended
Tongs

Fire up the grill (or just keep it going once you've pulled your chicken and roasted veggies off). Cut the peaches in half. Spread a thin layer of honey on the cut side and sprinkle with cinnamon. Make sure the cinnamon to completely covering the honey. Once the grill is hot place the peaches cut side down on the grill.

Leave for about 15 minutes. Use tongs to lift one peach to check grill marks and check for firmness. If the peaces are still too firm, douse with the cinnamon liquor and leave for another 15 minutes. If they are already soft to the touch of the tongs add liquor and then remove and place on a platter.

Let cool for a moment and place one peach on each plate. Sprinkle more cinnamon and drizzle honey over the dish. Add a scoop of ice cream if desired. Enjoy!

Makes 8 halves. Serves 4 - 8.

*If you are going to be using the liquor here make sure to keep hands, hair, towels (aka anything, really) away from the flame. Once you add the alcohol the fire will flare up.
